Roasted Chicken with Two Apples

Serves: 6 people
Prep time: 20 mins
Cooking time: 1 hour
Difficulty level: Medium

Ingredients:
1 whole chicken
salt
pepper
1 lb of small potatoes
2 branches of thyme
olive oil
6 apples
1/2 jar of raspberry or blackberry jelly (currant is recommended)

Preheat the oven to 400 degrees. Add salt and pepper to the chicken. Put chicken in a large baking pan and roast for 1 hour. Baste regularly while cooking.

Wash and dry the potatoes. Season with thyme, salt, pepper, and a small amount of olive oil. When the chicken has been cooking for a half hour, place the potatoes in the baking pan around the chicken.

Wash the apples. Use an apple corer to take out the middle of the apple. Add a small amount of jelly to the inside of the apples. Approximately 15 minutes before the chicken has finished cooking, place the apples in the baking pan next to the chicken.

Reminders:
Make sure you check the freshness of the apples before using.
If your pan is too small, you can cook the apples separately in another dish.

Chicken and Broccoli Penne

Serves: 4 people
Prep time: 20 mins
Cooking time: 15 mins
Difficulty level: easy

Ingredients:
1 pound of penne pasta
1 broccoli head
2 white onions
1 tablespoon olive oil
1 cup of cream
A few chives
1/4 cup pine nuts
4 cups sliced chicken pieces
1/2 cup parmesan cheese

Cook the pasta for 10 minutes in salted boiling walter. Break apart the broccoli and steam them for 10 minutes. Peel and chop the onions. Glaze the onions in hot oil and add the broccoli. Stir for 5 minutes before adding the creme and chives.

Grill the pine nuts for a few minutes in a clean pan. Strain the pasta. Stir the pasta in the pot with the broccoli and chicken. Sprinkle with the pine nuts and parmesan slices.
